Halloumi Naan with Peppers

  • 4 whole wheat naan
  • 14 ounces Trader Joe's sliced halloumi two packages
  • 10 ounces sliced mushrooms
  • 1 onion, sliced in moons
  • 2 bell peppers, sliced any color
  • 1 pinch dill
  • 1 pinch pepper


  1. Saute onion, peppers and mushrooms in a large pan over medium heat for about 15 minutes until the vegetables soften and the mushrooms release most of their moisture.  Sprinkle the seasonings over the vegetables and stir.  Salt is not needed, as the halloumi is salty already.

  2. While the vegetables are cooking, take another pan and lay out the slices of halloumi flat over medium heat.  Cook for about 5 minutes, or until golden brown, then flip and cook 5 more minutes on the other side.

  3. When the halloumi is done and the vegetables are finishing, turn on oven to 350 degrees and place naan directly on the middle rack for a few minutes while it is heating just to soften the bread.  It will become pliable and delicious.

  4. Add about 3 slices of halloumi to each naan and cover with vegetable mixture.  Fold the naan over the filling like a taco.  Enjoy!
