I sat down on Monday morning with Charlie and white knuckled my way through a plan. If you peek at my journal in the grocery cart below, you can see that my plan ended up being a little different than reality, which often happens.
Friday was Tim’s barbecue at work, and he wasn’t hungry, so I ended up just fixing something random for myself that I don’t even remember. That bumped pizza to Saturday, and on Sunday I wasn’t hungry for dinner, so Tim had charro beans and I had a peach. Don’t think that means I’m so healthy… it’s cause I had two donuts and wasn’t hungry, okay?? Ha! I’m healthy most of the time. That means I can make Tofu BLT’s for next week, which works out perfectly, because I forgot to get more tomatoes at the store!
My favorite recipe from this week was the Halloumi & Naan! Five stars for sure, and a definite repeat.
Tuesday– Halloumi & Naan w/ Peppers
Wednesday– Spaghetti and “Meatballs”
Thursday– Veggie Fritatta and Salad
Friday– On Own
Saturday– Veggie Pizza on Sprouted Crust- not pictured, sorry! I doubled the veggies for the fritatta the night before and saved half to put on the pizza. I used mozzarella cheese, plain tomato sauce, and a thin sprouted crust from Trader Joe’s. It was delicious!
